Day 2: Leftovers

I had a volunteer meeting at the church tonight, so I didn't get a chance to make anything.  Left over barbacoa night!  Actually, there wasn't enough for both lunch and dinner, so I went to Chipotle for dinner.

If you are on the slow carb diet, here is the Chipotle meal I recommend: burrito bowl with both kind of beans, no rice, fajita vegetables, chicken, salsa, guacamole, and lettuce.  Enjoy!
