Day 3: Meal Planning

Yesterday we had a worship night at the church, so I didn't eat dinner.  I did, however, make a list of possible meals to make! Many of these are from a recipe list that Katelyn made for our friends that are on the slow carb diet. She's amazing!  Here they are:

Progress made!

  1. just mention lentils and I'm hungry. add avocado, asparagus, mushrooms - and holy moly who told you all my favorite foods?!

ps. have you ever tried Kale? it's my new superfood love. not sure if it's considered a slow carb or not... what exactly are your slow carb diet rules anyway?

    1. I put kale in all my smoothies... the energy it gives me is SURREAL.

Here's a yummy kale salad recipe with quinoa and tangerine (is quinoa starchy? I know it's protien packed...) She recommends removing the ribs and massaging the kale with olive oil... and I think it's yummy. But to be fair, I have weird taste buds. http://glutenfreegoddess.blogspot.com/2012/02/kale-salad-with-quinoa-tangerines-and.html

And, I haven't tried this yet, but I really want to - Kale Chips: http://glutenfreegoddess.blogspot.com/2012/03/easy-crispy-kale-chips.html

(Yeah, I like that gluten-free foodie blog a lot.)

  4. Modified tomato soup? Tomato's are a fruit (seed baring portion of a plant) So is that allowed? I've very interested in this burger with yogurt. Do you mix them?
